Fish with salsa

Fish or Chicken with Crunchy Green Salsa

A simple crowd-pleaser, this healthy recipe is quick and easy to prepare but has lots of flavour. Either fish fillets or chicken breast can be used, as the crunchy green salsa goes well with both.

Preparation time:  10 minutes
Cooking time: 20 – 30 minutes

  • Oven-proof dish
  • Almunimium foil
  • Food processor
  • Chopping knife & board
  • Mixing spoon
  • Kitchen brush



  • 80g pitted green olives
  • 3/4 cup fresh coriander
  • 1/4 cup fresh basil
  • 60g natural walnuts, almonds, macadamias, hazelnuts or pistachios (or a combination)
  • ½ red onion, quartered
  • 1 long red chilli (optional), roughly chopped
  • 1½ tbs red wine vinegar
  • 1 tsp extra virgin olive oil
  • 4 fish fillets or skinless chicken breasts
  • Olive oil
  • Lemon juice




Preheat oven to 200°C.


Brush the fish or chicken with olive oil, place on a non-stick oven dish. Drizzle with lemon juice and season with pepper. Cover with foil and bake for 20-30 minutes, until cooked through.


In the meantime, rinse the olives under cold water and leave aside to drain.


To the food processor, add herbs, nuts, onion and olives and process until roughly and evenly chopped.


Add the vinegar and oil, salt and pepper to taste, and mix to combine.


To serve, transfer the fish or chicken to a plate and top with the crunchy green salsa.
