KALE CHIPS

Kale is a green leafy vegetable from the brassica (cabbage) family. It is often heralded as a super-food due to it’s high level of nutrients, including beta carotene, vitamin K, vitamin C, calcium, as well as other   antioxidants and anti-cancer compounds including sulforaphane and indole-3-carbinol.

There are several different cultivars or types of kale and many different names. The thick and curly-leaved variety (sometimes called Cavolo nero or Tuscan cabbage) is best for kale chips, but other types work well also.

Due to it’s hardy leaves, kale can be baked until crispy and flavoured with spices or simply salted. Here are a couple of recipes to give you some ideas. These can be served alongside a meal or combined with quinoa, rice or beans to give meals added flavour and a crunchy component.

 

Each recipe:

Preparation time:  10 minutes
Cooking time: 15 – 30 minutes
Serves: 4, as a side
Equipment:
  • Oven tray or roasting pan
  • Baking paper
  • Chopping board
  • Chopping knife
  • Large bowl
  • Mixing spoon

 

Crispy parmesan and chilli kale chips

Ingredients

  • 150g kale, stems removed and roughly torn
  • 1 tbs olive oil
  • ¼ tsp dried chilli flakes
  • ¼  cup finely grated parmesan
  • Salt & pepper 

 

Method

1.

Preheat oven to 180°C.

2.

Into the bowl add the kale, chilli, parmesan, salt and pepper, drizzle in the oil and mix well to combine.

3.

Spread out onto baking tray lined with baking paper and bake for 10-15 minutes until crispy.

 

Paprika and tahini kale chips

Ingredients

  • 150g kale, stems removed and roughly torn
  • 1 tbs coconut oil, melted
  • 2 tbs tahini
  • 1 tsp ground paprika
  • Salt

 

Method

1.

Preheat oven to 180°C.

2.

Whisk together coconut oil, tahini, paprika and some salt.

3.

Into a bowl, add the kale and pour over the tahini mixture. Mix well to coat the leaves evenly.

3.

Spread out onto baking tray lined with baking paper and bake for 20-30 minutes until crispy.
