ORANGE & FENNEL FISH

This is a quick and incredibly easy recipe that is very warming & aromatic. It goes well with the  Aromatic, Warm Quinoa Salad, which can be made earlier & kept warm. 

Preparation time:  2 minutes
Cooking time: 10 – 20 minutes
Serves: 2
Equipment:
  • Grater
  • Plate
  • Kitchen brush
  • Non-stick pan or oven safe dish/tray

  

Ingredients

  • 2 white fish fillets
  • Finely grated rind of 1 large orange
  • 1 tbs Fennel seeds
  • Olive oil

 

Method

The fish can be cooked in a pan on the stove, or baked in the oven.If cooking in the oven, first preheat oven to 200°C.
1. On a plate, mix together grated orange rind and fennel seeds until evenly combined.
2. Lightly brush fish with olive oil & press into orange & fennel mix to coat both sides of the fish.
3. For stovetop cooking, heat a non-stick pan on medium-high heat & cook fish for 5 minutes on either side or until browned & cooked through.For baking, place the fish on a non-stick oven tray/dish & cook for 15-20 minutes, or until cooked through.

Serve with Aromatic,Warm Quinoa Salad.
